Why is pretzel dough different than other types of bread? We found that when you boil prior to baking the dough in a baking soda bath, the starches on the surface of the dough gelatinize (yup jello-ish) and form this soft crust. Once it bakes, it gets crunchy. (This process reminds me of when I made bagels at a bagel shop while one summer as a college student.) Do you want to try? Here's a simple pretzel recipe and video tutorial that uses only 9 ingredients and takes only 30 minutes. Delicious!
